Full subprimals are recommended for dry-aging because the larger the cut of beef, the longer you can dry-age for the best results.

Our patent pending Truss Rack is designed to make loading and securing a full subprimal fast, easy and with clean hands. Racking a full subprimal vertically optimizes airflow and allows for peak capacity in the space. The truss rack will also leave a 1.5″ imprint on the cut of beef so you always know where to slab your steaks!

Includes (1) Truss Rack and (1) Truss Rack base (1) 6m length butchers twine
